Recipe: Malaysian Sushi Roll

Genji master chef Richard Teoh shares with us the recipe for Malaysia sushi roll:


Ingredients
1 cup sushi rice
1 seaweed sheet
150g bonless chicken rendang
80g chicken floss
40g julienned cucumber
Some chilli padi
Some lettuce, Romaine or any salad greens
Some Wasabi paste
Bamboo Mat

1. Lay the seaweed sheet on the bamboo mat.
2. Wet both hands, take a handful of sushi rice, place it at the centre of the seaweed sheet, spread the rice on the seaweed evenly
3. Spread the chicken rendang, chicken floss, cucumber, lettuce at the centre of the rice layer.
4. Together with the bamboo mat, roll and fold the sushi forward to another end of the rice layer while holding the contents gently.
5. Lift the bamboo mat, turn the sushi roll over the empty space of seaweed sheet, lay the bamboo mat over the sushi roll and press gently.
6. Remove the sushi roll from the bamboo mat.
7. Cut the sushi roll and serve with ginger pickle and wasabi paste.

This month, enjoy six varieties of Makimono (sushi rolls) at Hilton Petaling Jaya’s Genji Japanese Restaurant.
Genji master chef Richard Teoh and his team draw inspirations from Japan, Boston, Asutralia, Malaysia, India, and Korea for its International Makimono promotion this month.
From the land down under is the reverse roll with Australian kingfish and flying fish roe (RM50++).
Next, we had sushi roll with Boston lobster glazed with teriyaki sauce (RM190++), served with lobster miso.
For some local flavour, try the Malaysian sushi--Chicken Rendang roll with vegetables and chilli padi (RM40++).
The Kimchi roll with spicy chicken, lettuce and cucumber (RM40++), was inspired by the land of morning calm.
Vegetarians are not left out; there is the vegetarian “India” sushi roll with assorted vegetables (RM40++), served with vegetarian soy sauce.
All sushi are served with wasabi and pickled ginger.
The sushi rolls are available for lunch (noon-2.30pm) and dinner (6.30pm-10.30pm).

The Japan sushi roll has chopped tuna belly, spring onion and bell peppers (RM100++). The sushi has a refreshing minty taste thanks to the Japanese Oba leaf in the sushi.

 One of the best tempura I've tasted. It is crunchy yet the sweetness and freshness of teh vege is maintained, absolutely love it <3
