Ramadan: Dorsett Grand Subang

Enjoy state specialties at Dorsett Grand Subang’s Semarak Rasa Ramdan buffet.
Dorsett Grand Subang executive sous chef Zainal Ahmad, sous chef Mohd Busthomi Bukhari, and the culinary team will prepare over 100 dishes this Ramadan.
The signature items are the Kambing Golek Berempah and Sup Tulang Gearbox, where 50 to 60 pieces are prepared daily.
Chef  Mohd Busthomi , who began his culinary career in 1995, said they have selcted the highlights from each state.
He recommended the Gulai Tempoyak Patin Pahang.
“There is no fishy taste. The Tempoyak Durian is great when paired with white rice, we use specially selected durian,” he said.
He also recommended the Kari Kepala Ikan Penang.
“We use homemade mixture of spices for the curry. These are authentic dishes made by our experienced Malay chefs,” he said.
Other state specialties include Briyani Gam Johor, Dalca Sayur dan Mangga Muda Penang, Gulai Kawah Kelantan, Rendang Tok Perak, Tetel Asam Pedas Melaka, Gulai Lemak Pisang Muda Selangor, and Sup Campur Kedah.
For those who enjoy seafood, choices are aplenty, such as Sotong Goreng Berlada Negeri Sembilan, Sotong Sumbat Terengganu, and Ikan Bakar Kuala Perlis.
One of my personal favourite was the Laksa Sarawak.
According to chef Mohd Busthomi, the herbal spices and paste from Sarawak lends the flavour and aroma to this dish.
There is a variety of local and Western desserts.
The Crème brûlée is one of the hidden gems unearthed at the dessert section.
It is usually not my go-to dessert but the one here is rich and creamy yet not overly sweet like the ones I’ve tried elsewhere.
Turns out it is one of the must-try desserts at Terazza Brasserie. Chef Mohd Busthomi said it is a favourite of many hotel guests including a football team from Bahrain and some of the long-staying guests.
“One guest who stayed with us for two weeks had it daily after tasting it,” he said.
Pastry chef Mohd Hairul Abadi revealed that the secret lies in the cooking technique and the ratio of cream and sugar.
It was all snapped up before my colleague Azlina had a chance to try it so be quick if you want to try it.

Priced from RM165 nett (adult) at Terazza Brasserie and RM155 nett (adult) at Melati Room. There is a 50% discount for children and senior citizens. Terazza Brasserie can accommodate 350 pax while the total capacity for Melati, often used for corporate functions, is 800.
